Rice and Beans with Fresh Veggies — Yum!

It was 10 months ago that Sylvia and I began a transition toward a [mostly] vegan diet.  Like so many, we were hooked on the typical American diet.  That meant meat at most meals, lots of butter and dairy products and quite a bit of fat.

We gave away some food and slowly ate the items that were open.  (Folks like us are not apt to throw usable stuff away.)  We shed some weight, but not a huge amount.  I began to feel better.  Within a few weeks, I didn’t get winded as easily as before–I had not changed my exercise habits.  Or lack thereof.

At first we enjoyed the sense of adventure as we tried new foods and new recipes.  Sylvia made things look good by assuring plenty of color and textures.  After a few months, we realized that our tastes had changed.  We would at times eat meat, but didn’t enjoy it all that much.  Fatty foods taste bad and make us feel bad.

Last Sunday, I had a BLT wrap.  Bad mistake.  Too much bacon and lots of cheese.  I won’t do that again!  I returned home with my carry out sandwich and found a small bag of potato chips in the box.  I ate them.  I won’t do that again either!  Ugh.  I felt so bloated and my stomach still feels off as I write this Monday afternoon.  I’m so looking forward to my next meal being a salad.

I find that a diet based on veggies, whole grains and fruit is very satisfying.  Makes feel better too.

I’m just glad that chocolate grows on a plant!  How about you?

  1. I feel so much better when I eat healthy foods and so terrible when I don't. Can you tell me why I even bother with the bad foods? Good for you on taking the steps to a healthier lifestyle. I'm still recovering from the Valentine's Day meal that I made. It was delicious but totally not worth the way I feel. Thanks for stopping by to see me. I hope you have a wonderful weekend, Candace

  2. Oh man, that plate of food looks good! And since you have the same Corelle we do, I'm certain that's meant for me.

    Love my veggies! I eat a little meat, but don't miss it much. I just like the veggies better. Once in a while I get hungry for a hamburger.

  3. Me too, I don't like eating meat most of the time. I prefer vegetables, either saute, soup or any other ways of cooking. And take note, I feel good when it's vegetables alone without meat, well sometimes I put some knorr cubes to taste but not the raw meat or the meat itself. Maybe that's what I used to eat while i was young. Also, I don't prefer cold drinks, it's just now here in USA that I can stand cold drinks sometimes, unless of course if there's an occasion as to the soft drinks.

  4. I'm with you Chuck. When I stray to a fatty or cheesy or meaty dish it makes me feel yucky. And I do it so much less than I did at first.

    The only problem with the chocolate is they also put milk in it – even in the dark chocolate. But lots less than in milk chocolate. So I do occasionally eat the dark chocolate. It's SOOOOO yummy.

  5. I have switched to white whole wheat flour but I think I am a child of my generation. Although we don't eat fried and we grow all of our vegetables and meat for that matter. I make all of our bread and treats and most of our pasta. So I think our diet is better than most…

  6. I ate at a restaurant last night with my husband for Valentine's Day. I was sick in a couple of hours. With my gluten-free diet, I have to be careful and I wasn't this time. At restaurants, you have no idea what's in the food you're eating.

    Vegetables and fruits are "safe" foods for the vegetarian, vegan, and gluten-free diets alike. I want to begin a transition to maybe a vegetarian diet to start with, but the rest of the family (excluding my vegetarian son) is really balking at it. They think I want to kill them.

  7. I definitely feel better when I eat healthy foods. I generally eat about half healthy and half not as healthy foods. BTW, the sugar in chocolate also comes from a plant! Ok, well it's highly processed… 😀

  8. Same here! I am only in my early 40s and already I can't stand junk food and sweets– I need my green veggies! They are truly more satisfying than anything. And when I eat junk, I feel it later.

    No lima beans in the salad?

  9. Isn't it odd how you feel so poorly after eating something that isn't healthy? I mentioned this to my P/T one day because I find that I really feel it if I eat chips or fast food. She said that most people feel bad after eating like that, but because they do it all the time, they don't know the difference. I think she is right.

    Good for you changing your diet! It certainly looks delicious.
